Zingy pasta salad

 

This is a lovely, light pasta dish that you really can just keep eating.

Ingredients:

Pasta

Half a cucumber diced

half an onion diced

a few tomatoes diced/roughly chopped

juice of a lemon

a good bunch of chopped mint

How To:

Cook the pasta,

Add the cucumber, tomatoes, onion and mint into the pasta,

then add the lemon juice little by little until it suits your tastebuds.
